I had both tomatoes and eggplant in this week's CSA box, so I immediately made this. It's fantastic! I also added freshly roasted corn from the cob. It's definitely a new go-to recipe. Thanks for sharing!

I am not sure where to post but I just wanted to let you know how much I have appreciated and enjoyed Cook This Now! I have 2 young kids and am a military wife and while living in Ohio last year learned to shop the farmers market and eat seasonally. I perused the library for a good seasonal cookbook and after lots of overly gourmet books came across yours. I love all your little sidenotes and family stories and the simplicity but flavorfulness of your recipes. Your coconut brownies were a huge hit at Valentines Day, the kids and are I weekly grinding buckwheat groats in the coffee grinder and are devouring local peaches with the cardamom syrup. And the rose veal and chicken thighs--things I have never tried but are so easy and delicious! Thank you, thank you, thank you, i love cooking again and can't wait to see your next seasonal cookbook!
